The good hygiene practice certificate is a quality or standard certificate directed at showing that cleaning, personnel hygiene, equipment hygiene, the prevention of cross-contamination, pest control, water and raw material safety, waste management and hygiene records are managed according to defined rules in food production, preparation, storage, transport, service and presentation processes. It certifies not the food itself but that the environment, personnel, equipment and processes in contact with food are managed hygienically.
